Vanilla
was introduced to the Old World in 1520 when the Aztec emperor Montezuma
of Mexico welcomed the Spanish conquistador Hernando Cortes with 'chocolatl',
a drink concocted from powdered cacao and flavoured with ground vanilla
beans called 'tlilxochitl' (black pod). After the discovery of the secret
ingredient, vanilla was brought to Spain, and later to many other countries
including India where it is grown and processed to exacting international
standards. Though different curing methods are available, the Bourbon
technique is practiced in India, which involves killing, sweating, slow
drying and conditioning.
